Q. I have someone who wants me to double the amount of chips...how much can I add without it messing up how the cookies turn out?
A. Although it is tempting to just start throwing chocolate chips into the mix with wild abandon, you are wise to consider the final outcome.
Assuming that we are talking about a recipe for a single batch of chocolate chip cookies that is similar to the Nestle Toll House recipe,(about 3 doz cookies) then I would not use more than 2 cups or (1) 12 oz bag. It is my personal opinion that any more chips than that do keep the cookie from spreading properly.
My rule of thumb when adding baking pieces to the dough whether it is chocolate chips, candy pieces, nuts, raisins, etc., is that it never goes above two cups total. So if you have nuts and chips, then together they should make two cups.
If you wanted to add another half cup or so, that should not be too detrimental. But, doubling I would not recommend unless you doubling the whole recipe as well.
