Q. I only have dark brown sugar so I'm wondering if I use it, what the difference will be. Do I need to adjust other ingredients if dark brown sugar is used?
A. Mmmmmmmm. I am a bit of a brown sugar junkie. I LOVE dark brown sugar. The good news is you can substitute light with the dark any time. The difference between dark brown and light brown sugar is dark brown has more molasses in it, therefore, producing a richer flavor. However, with the additional molasses comes additional moisture and adding 1-2 Tablespoons of flour to the dough will help with the final texture and consistency.
If you ever find yourself without any type of brown sugar at all you can always make your own. Homemade brown sugar is quite easy to make and every bit as good as store bought.
