Q. Can you make homemade chocolate chip cookies with out baking soda and vanilla extract?
A. Well, you could if you wanted to produce dense chocolate chip cookies. Baking Soda produces gases during the cooking process that lift the cookie making them airy and soft. The eggs should be able to lift the cookies some, but without the added help of the leavening gases that baking powder and soda produce, it would not be the same.
Vanilla you can skip, but do not expect the same deep flavor that a chocolate chip cookie typically offers. It would have more of a shortbread like taste.
