Q. I have tried so many recipes and so many different tips, such as adding the marshmallows to the top of the cookie, rather than mixing them into the dough. Since I always let my dough rest in the fridge before baking, I just tried adding the marshmallows to the tops of cookies after baking for 5 min-- this was a little better, but still not what we've been hoping for.

A. Hi Melissa! It sounds like you are baking a unique batch of cookies with your kids.
Although I have never put marshmallows in my cookies, I am assuming that your problem is a marshmallow that melts fast and leaves a gooey hole in the dough. Marshmallows are made with so much sugar and corn syrup I am afraid they would not stand a chance in a hot oven.
I have two suggestions I can offer. One would be to freeze your marshmallows. Once they are good and firm you can add them to your dough at the last minute and that MAY buy you some more time before they melt and lose their form.
My other suggestion, and the one that will most likely yield the results you want is to push the frozen marshmallows into the hot cookies right out of the oven. The cookies will be soft and pliable and the frozen mini mallows should ease right into the cookie. The mallows should keep their form and not melt entirely.
