Q. I would like to make chocolate chip cookie ice cream sandwiches.
I want to be able to make the cookies(in advance), put them in freezer then take them out when needed and to be used immediately. I want to be able to put ice cream in them as soon as they come out of freezer and eat at that moment with out waiting for cookie to defrost or reach room temperature.
A. This is a very unique question. I have to admit that I slept through most of my science classes and if there were a very brainy solution to this problem.......I am not the person to solve it.
If you are trying to duplicate the commercial store bought ice cream sandwiches found in the freezer section, you would have to take into account the many preservatives and starches that are in the cookie that keep them from freezing all the way. This makes it difficult to duplicate at home.
Frozen is frozen, and if I understand you correctly you don't want a rock hard cookie. You would like a firm cookie that does not break around the ice cream. Try this pudding chocolate chip cookie recipe and see if you achieve similar results to a store bought sandwich. It is a very soft cookie.
When I make homemade ice cream sandwiches with my chocolate chip cookies, I freeze the cookies for only an hour or so and then fill them with ice cream. This gives me a cold, firm cookie that can handle the ice cream and not break. When the cookies go into the freezer they are room temperature, not hot out of the oven.
For what you are trying to accomplish, it all comes down to how long to leave the cookies in the freezer. Experiment with different times to see what level of firmness best fits what you are looking for. Leaving a cookie in the freezer too long and freezing it rock solid would make it necessary for the cookie to sit at room temp for at least 30 min before filling with ice cream.
If you want your chocolate chip cookies stock piled in your freezer so that you can enjoy ice cream sandwiches on a whim, then try microwaving the cookies for 5 seconds; just long enough to take the chill out, but not completely defrost.
