What else can I use besides butter? Something to make the cookies more healthy.

Q.Is applesauce an option in lieu of butter?

A.Yes! Applesauce is a great substitute if you are looking for a natural alternative. Although it has similar binding agents, it will not have the same taste as butter. It particularly works well in oatmeal cookies as it works well with the flavor of oatmeal.

There are some margarines that you can substitute for butter that have less saturated fat. However, they have trans fats in them which are not a very good trade off. Plus, with the added water in margarine and other ingredients, I have always thought it to be an inferior baking product.

Here is an excellent resource for your fats and oil substitutes in baking and other cooking.
