Cookies typically are not synonymous with healthy eating but these whole wheat chocolate chip cookies may change your mind about that. Packed with fiber and lower in fat and sugar than a run of the mill chocolate chip cookie recipe, you will be surprised at how delicious they really are.
Thanks to health trends in smarter eating, finding a healthy cookie recipe is getting easier and easier. There are, however, many to choose from. This whole wheat chocolate chip cookie still uses the binding fat of butter, but less of it. Brown and white sugars are used, but again less than you would normally find. The truly great thing about this healthy chocolate chip cookie recipe is that it uses buckwheat pancake mix which cuts back on time and extra ingredients. With added dark chocolate and walnuts this sweet treat provides fiber, antioxidants, and proteins.
TIPS: You can choose any brand buckwheat pancake mix you like, just make sure that it has whole wheat flour and buckwheat flour. The mix will also contain your leavening agent, such as baking soda, and salt so there is no need to have these in the recipe. (This is why it is important that you use a buckwheat pancake mix and not plain buckwheat flour!)

Cream the butter, brown sugar, and white sugar until fluffy. Add eggs one at a time until mixed. Add vanilla and lemon juice. Slowly, with the mixer on, add pancake mix one cup at a time. Add chips and nuts and mix until just blended. Drop spoonfuls of batter onto parchment lined cookie sheet and refrigerate 2-3 hours. Bake in a 325 degree oven for 15 minutes. Cookie should be nice and fat!
