Why do my cookies always go soft?

Q. Even though my cookies look dark, almost burned, they are soft. I like a crispy, chewy cookie.

A. If I understand correctly you are looking for a crispy cookie on the outside with a little chew on the inside.

Basically it is a matter of ingredients and how you store the cookies afterwards. You are right to cook the cookie longer for a very crispy cookie. If you wanted to help maintain the crispness try using more white sugar than brown sugar in your recipe. Visit this chocolate chip cookie ingredients page for more information on how to use ingredients to get the cookie you desire.

Once the cookies are baked and cooled let them sit out for 24 hours before putting them in your cookie jar or bag. This will give them more time to lose some moisture and ensure crispy-ness.

Try this Neiman Marcus Knock Off recipe. I think it may by just the cookie you are looking for.
